The story behind this refreshing cocktail is super easy: It is named after Joe Rickey, a Democratic lobbyist living in Washington, D.C., during the late 19th century.  He preferred drinks without sugar, and one day, after adding lime to his signature bourbon and carbonated water, his drink was made. The gin version superseded the original bourbon recipe in popular, which is why we have this named after him as well today.

Ingredients

  • 2 oz Gin
  • 1/2 oz. lime juice, freshly squeezed
  • Club Soda
  • Ice
  • Garnish: Lime Wheels

Instructions

1. Fill a highball with ice.

2. Add fresh lime juice and 2 oz. gin to the glass. Fill with club soda, to the top.

3. Garnish with lime wheels if desired!
